A wholesome take on rice pilaf, this vegan superfood recipe uses a combination of kamut berries, chopped walnuts, capers, watercress, chives, and goji berries as its base. It’s topped with sautéed shiitake mushrooms and broccoli rabe for a satisfyingly plant-powered meal.

4 ounces shiitake mushrooms, stems removed and sliced
1 bunch broccoli rabe, chopped
4 tablespoons extra virgin olive oil, divided
2 cups cooked kamut
1/2 cup chopped walnuts
2 tablespoons capers, chopped
1 cup watercress (leaves only), chopped
1/2 cup goji berries
1/4 cup fresh basil leaves, chopped
1/4 cup fresh chives, chopped
1 lemon, sliced in half
sea salt and pepper, to taste
