Socca is a flatbread popular in Nice, France. It is naturally gluten-free as it uses chickpea flour, also known as gram flour. The protein packed flatbread is then topped with grilled radishes which are milder than raw radishes and balanced with herbs and onion.

For the SOCCA:
1 ½ cups chickpea (or gram) flour
1 ½ cups water
2 ½ tablespoons olive oil, divided
¼ teaspoon sea salt
For the RADISHES:
1 ½ cups radishes, finely chopped (about 1 small bunch)
¼ small red onion, sliced into thin half moons
1 garlic clove, minced
1 tablespoon olive oil
2 tablespoons mint, finely chopped
¼ teaspoon sea salt
1 tablespoon cilantro, finely chopped
