Light and refreshing, this salad uses fresh cherries and mint plus a nutritional powerhouse, pistachios. To easily pit a cherry without a cherry pitter, simply use a chopstick and push down through the stem side until you can release the pit.

1 cup cucumber, diced
¼ cup pistachios, toasted
For the DRESSING:
3 tablespoons mint, finely chopped
2 tablespoons fresh orange juice
2 tablespoons fresh lemon juice
⅛ teaspoon sea salt
